Vegetarian Dinner

So I cooked hubby and me a vegetarian dinner, found the recipe in a cookbook I had collecting dust. "Chickpea Tagine with Brown Rice" it was very taste I must say. A very quick and easy meal to put together for those with a busy schedule.

Ingredients

2 tbsp sunflower oil or extra virgin olive oil
1 large onion, chopped
2 garlic clove, crushed or chopped (optional)
400g can of chopped tomatoes
1 tsp ground cumin
2 x 400g cans chickpeas drained
1 bell pepper green
1 bell pepper red
350ml/1 1/2 cups vegetable stock or 1 stock pot.

I added some chilli power to the mix as I love spicy food
1 tsp chilli powder (optional)

This can be served with crusty bread, couscous or rice.
