Chia Banana Bread

I love banana bread it taste so good and taste even better spread with organic peanut butter & washed down with a cup of green tea. I've wanted to try baking with chia seeds for awhile as I've been told its great for baking. I've been using it in my smoothies, porridge, stir fries, bolognese & sprinkled over my salads so thought I give it a try.

Chia seeds are high in Omega-3 fatty acids and contain high levels of antioxidants and valuable nutrients. They are rich in fiber and do not need to be ground for your body to absorb their nutrients. Chia seeds can be used in many different ways.


Chia is wonderful for gluten free baking, because it is an excellent binder and thickener. The amount needed may depend on the recipe, and might take a little trial and error. A small amount of chia can also replace xantham or guar gum. For most recipes, ¼ to ½ teaspoon of ground chia can serve as a binder.

Chia is also a great addition to egg free or vegan baking.
  

This recipe is Dairy, Gluten & Wheat Free and can be adjusted to your needs.

Recipe Ingredients:

1 tbsp chia seeds
1/2 cup water
4 ripe bananas
1 tsp vanilla extract
1/4 cup virgin olive oil
5 tbsp agave nectar
1 1/4 cups of water
2 cups gluten free flour
2 tsps baking powder
1 tsp baking soda
1 tsp Salt
1 tsp cinnamon 
1inch of ginger (optional)
1/2 cup of chopped organic walnuts ( optional)
1/2 cup of dessicated coconut (optional)

Cooking Directions:

1. Combine in small bowl the chia seeds and water, mix well, and set aside at room temperature for 15 minutes until chia seeds have swollen.

2. While chia seeds are swelling, in another bowl, combine peeled banana, vanilla, olive oil and agave nectar and mix with electric mixer until the mixer is very smooth with no lumps. Once chia seeds have swelled add to banana mixture and blend well. Add remaining cup of water and mix until well blended.

3. In another bowl combine flour, baking power, baking soda, salt and cinnamon and mix with a wire whisk. Slowly add dry ingredients to wet ingredients while mixing with electric mixer until well blended before adding more. After all of the dry ingredients are added and well blended, add walnuts & coconut. Mix well and pour into desired non stick tin.

4. Bake in oven on 350 F 180 C for 30 minutes or until a toothpick comes away clean. Allow to cool.
