The Total Greek Yogurt - 7 Day Challenge


I was contacted by Total Greek to participate in their #TryTotal challenge, they sent me a lovely box goodies through the post to make a dish using yogurt and to also create meals using yogurt for the next 7 days.



My box contained:
  • Recipe card - for Yogurt & Harissa Marinated Roast Chicken
  • Total 2% Greek Yogurt
  • Quinoa
  • Radishes
  • Mint
  • Pomegranate Seeds
  • Fennel Bulb
  • Wrist sweatband - not part of the recipe

To complete the recipe I purchased some chicken breast and a jar of Harrissa paste.


Ingredients

Monday - Dinner Yogurt & Harissa Marinated Roast Chicken
125g TOTAL 2% Greek Yogurt
3 medium chicken breaks
1 tbsp harissa paste
2 cloves garlic crushed
8 mini peppers, halved
1 lemon, quartered
400ml hot vegetable or chicken stock
175g quinoa
150g radishes, sliced
Small fennel bulb, very thinly sliced
Small bunch mint, torn
100g pomegranate seeds










Method

Score the chicken a few times, then put into a strong large food bag with the Greek Yogurt, harissa paste and garlic. Seal and massage the bag to coat the chicken. Set aside for at least an hour or overnight, chilled.

Heat the oven to 190oC / 375oF / Gas Mark 5. Put the peppers and lemon in a 2 litre ovenproof dish. Add the chicken and bake for 30 minutes.

Meanwhile,bring the stock to the boil in a small pan, add quinoa and cook over a low heat, covered for about 15 minutes until the stock has been absorbed. Cool for 10 minutes.

Rest the chicken for 10 minutes on a board then slice thickly. Mix the peppers with the quinoa, radishes, fennel, mint and pomegranate seeds, then serve topped with the chicken and roasted lemon.

I'm not a fan of fennel, well to be honest I've never tried it before but the smell was really off putting as I hate Liquorice. But upon tasting the dish I was very surprised at how great it all tasted, my hubby enjoyed it too.

I had some left over and took it to work the next day for lunch. A really healthy easy dish to make and one I shall be making again.


Total Greek Natural Yogurt is very versatile as I found out.. I have never thought to cook with yogurt until now. I really enjoyed the experience and will be making sure that I put Total Greek Yogurt on my shopping list from now on.

Total Greek Yogurt compliments so many foods (it’s great for breakfast – on cereal, with fruit, or even on its own!) and it’s a great all-natural, fat-free dairy alternative.
