Spicy Potato & Cauliflower Stew with Chia & Hemp Seeds

Last week I bought some Hemp Seeds and now I can't get enough of them, I've added it to my omelette's and yogurt so far and now my stew, hemp seeds are so versatile. This is a great meal for those cold winter nights, everyone loves stew, it's easy to prepare & simply to make with a nice kick to warm your cockles.



1 medium onion, chopped coarsely

2 garlic cloves, finely chopped

1 medium cauliflower, cut in to bite size pieces

3 medium potatoes, cut into chunks 

1 medium courgette, cut into chunks

3 medium carrots, cut into medium size sticks
1/2 tin tomatoes

2 stock cubes (low salt) I used kallo organic vegetable stock
1 tbsp chilli powder
2 tsps turmeric 
2 tbsp chia seeds
2 tbsp hemp seed


  1. Preheat oven to 180°C (350°F, gas mark 4). Put all your vegetables, tin tomatoes including onions and garlic into your ovenproof dish. 
  2. Make up your stock with 1 pint of boiling water, add the turmeric & chilli powder to the stock and stir and pour the stock over the vegetables, give it a little stir and place dish in the oven. 
  3. Cook for 1 hour or until vegetables are just slightly soft, add chia & hemp seeds 45min during cooking time add more water if needed and gentle stir.
  4. Serve on it's own or with some brown basmati rice.
