Breakfast Energy Bars





These energy bars are not only to be eaten at breakfast they are perfect for a quick boost before hitting the gym or after. They are so easily be make.. WARNING you will end up eating some of the mixture before it's even gone in the oven.. I did!
 

Makes 12 bars

Cooking time: 15 mins


Ingredients


100g cashew butter or any nut butter of your choice
200g organic clear honey
200g rolled oats
150g mixed seeds
100g toasted, flaked almonds
100g sultanas
50g ground almonds

1tsp cinnamon
50g Goji berries
Sesame seeds for sprinkling.



Instructions

  1. Preheat the oven to 180, gas mark 4.
  2. Mix the nut butter and honey in a bowl until smooth. Stir in all ingredients except the sesame seeds and press into a square baking tin. Sprinkle over the sesame seeds.
  3. Bake for 15 minutes until golden. Allow to cool slightly before cutting into 12 bars.
  4. Leave in the tin to cool completely before removing.
