Sweet Potato Ratatouille

Sweet Potato Ratatouille

Ratatouille is a popular Mediterranean dish, which is so easy to prepare. I decided I would add some sweet potato to the mix just to see how it would taste and I'm so glad I did.

Serves 4

2 medium sweet potatoes, peeled & cut into cubes
1 medium aubergine, cut into chunks
1 medium onion, chopped
2 cloves garlic, chopped finely
2 red chillies, chopped finely
1 large courgette, chopped 
1 medium red bell pepper, chopped
1 can tin tomato
1 tsp cayenne pepper
1 tsp paprika
2 tsp oregano
1 low salt vegetable stock cube
4 tbsp olive oil
1/2 teaspoon freshly ground black pepper


  1. Heat pan and add 2 tbsp olive oil.
  2. Brown aubergines on both sides until soft, set them aside.
  3. Add the rest of the oil and saute onions until soft, add garlic, red chillies and spices (not black pepper) on a medium heat.
  4. Stir in sweet potato and 1/4 cup of water, cover and simmer for about 10 minutes until sweet potato becomes tender. 
  5. Add courgettes, red pepper, tin tomato & vegetable stock cube, cook for 4 minutes then stir in aubergines add black pepper, cover and simmer for 5 minutes. Add water if needed.
  6. Serve with boiled rice or couscous and garnish
