Vegan Gluten Free Moringa Oat Pancakes

Oatmeal Pancakes

love the weekends! It’s the only time I get to experiment in the kitchen and make yummy breakfasts, well that is if I am not out at some kind of fitness event or having a lazy I don't want to do nothing kind of weekend. 

If like me, you follow your favourite foodies on Instagram you will be overwhelmed with an array of food inspiration that makes your mouth water and your left wishing you had just half the skills they have. The presentation is just out of this world, I’m not the most artistic of people but I was pretty impressed with my creations.

Topped with passion fruit and figs

Ingredients - makes 6 - 8

1 cup gluten free oats - blended in a blender to make oat flour
1 teaspoon stevia
1 tsp cinnamon
¼ tsp himalayan salt
¼ tsp baking powder (gluten free)
¼ tsp bicarbonate of soda (gluten free)

1 cup of non dairy milk of your choice - I used alpro coconut milk
1 tablespoon coconut oil
1 tablespoon moringa power - I used Minvita

  1. Mix dry ingredients in a bowl (oat flour, stevia, cinnamon, moringa powder, salt, baking & bicarbonate of soda powder).
  2. Pour in non dairy milk & coconut oil and whisk together.
  3. Ladle batter in a hot non stick pan or lightly grease your pan with coconut oil, and cook until lightly brown on each side.
  4. Serve with sliced banana, fruit or anything you desire.

Layered with Bananas and topped with stewed berries
