Apple Cinnamon Pancakes - Vegan & Gluten Free

Pancake Sunday is becoming a bit of a thing in my house now, so whilst I was thinking about what toppings I was going to have, I looked in the fruit bowl and to my horrible no bananas... Are you serious! only two organic apples so whipped up these bad boys.

Breakfast is served....Enjoy!


Ingredients - makes 3 - 4

1/4 cup gluten free flour
2 tbsp millet flakes (gluten free) or use oats if you don't have millet.
1/2 cup finely chopped apple - about half a large apple
1 stick of natvia stevia
1 tsp cinnamon
1/4 tsp himalayan salt
3 tsp baking powder (gluten free)
1 tsp vanilla extract
1/4 cup of non dairy milk of your choice, more if needed - I used alpro coconut milk
1 tsp coconut oil

  1. Mix all dry ingredients in a bowl.
  2. Add wet ingredients, including the apple and mix together.
  3. Spoon mixture in a hot non stick pan or lightly grease your pan with coconut oil, and cook until lightly brown on each side.
  4. Serve with a nut butter of your choice, apple, cinnamon & cranberry sauce and spinkle with seeds,nuts & berries - I used Dr Gaye Super Spoonful.

Apple, Cinnamon & Cranberry Sauce

1/2 Apple
Handful of frozen cranberries
1 tsp cinnamon
2 - 3 tbsp of water

  1. Place all ingredients in a small pan and stew to make your sauce.
