Raw Vegan Burgers
I attended Explore Raw Cookery School last weekend, and so glad I did. We learnt how to make some amazing raw recipes, from Chocolate Mint Truffles, Lavender & Purple Basil Cheesecake, Raw Thai Curry & Rice and Burger meat. The following recipe is for Stephanie's Vegan Burgers, which she kindly allowed me to share with you.
Ingredients for 8 burgers you will need
1/2 cup sunflower seeds soaked overnight
1/2 cup soaked buckwheat soaked overnight
1/2 cup soaked flaxseed (2 hours or overnight is fine)
1/2 cup chopped onion
1 tsp garlic powder
1 tsp onion powder
5 sun-dried tomatoes (rehydrated or if out of a jar then wash off the oil)
1 tsp red pepper powder or paprika
1 tsp chia seeds
1 tsp water or date soak water
1/2 cup chopped parsley
Method after soaking the first three ingredients - pour away the soak water and rinse. Place all ingredients (except chia seeds) in a food processor and blend until it reaches the consistency of burger meat. Transfer to a bowl and fold in the chia seeds with a spoon. Form into burger patties and leave to rest in the fridge for up to 2 hours to allow the chia seeds to bloat.
Dehydrate on 40 overnight (8 hours) (turning once) or if you do not have a dehydrator use the oven on 50 with the door ajar for 4 hours. They will be semi warm when done.
After dehydrating these babies at home, I made a yummy dinner with some roasted red pepper sauce, avocado & butternut squash chips. My first time eating a raw burger and I really enjoyed it.
