Vegan Chocolate Cake with Raspberry & Acai Chia Jam Topping

SuperFood Cake Heaven

11/2 cups spelt flour - organic if you have it
1/3 cup organic cacao powder
1/2 teaspoon baking powder
1/2 teaspoon himalayan pink salt
1 cup organic coconut palm sugar
1/2 cup organic cold pressed coconut oil
1 cup chilled green tea
2 teaspoons vanilla extract
2 tablespoons cider vinegar

For the topping 

1 cup raspberries (fresh)
1 tablespoon organic chia seeds (I used selva organic brand)
8 tsps acai powder
2 tsp lucuma powder (I used selva organic brand)

  1. Preheat the oven to 170 degrees celsius. 
  2. In a bowl mix together your dry ingredients, making sure it is really blended together. 
  3. Add the tea, vanilla, coconut oil, and vinegar, and again, mix together so that it's really blended together. Use a spatula to scrape down the sides if necessary.
  4. Pour into a cake tin.
  5. Place in oven and bake for about 30 minutes, or until a knife comes out clean. Cool on a rack completely (2 hours).
  1. Add raspberries, Chia, Acia & Lucuma powder for a little sweetness into a blender add a 2 tbsps of water gradually more if need until you have a thick jam consistency.
  2. When cake is cooled spread the jam then sprinkle with desiccated coconut.
