Cashew Nut Butter Granola || Gluten Free

Homemade Cashew Nut Butter Granola - eat it for breakfast or as a snack

There is nothing like homemade granola, and if your looking for a healthy breakfast or snack for the kids then this is so easy to make and you can add whatever nuts, seeds or fruits you like to it.

4 servings

1/4 cup of cashew butter (i used meridian crunchy)
1/4 cup maple syrup (I used meridian)
1/4 tsp of cinnamon
1/2 tsp vanilla extract
1 cup of oats (gluten free) or non gluten if you prefer
1/2 cup of cashews

  1. Preheat oven to 180. Using a large baking tray, line it with parchment paper and lightly coat parchment paper with coconut oil and set aside.
  2. Combine cashew nut butter and maple syrup in a bowl and stir until smooth.
  3. Add cinnamon and vanilla, stir again, add oats and cashew nuts or any nuts of your choosing and stir until oats are completely coated with the cashew mixture.
  4. spread out evenly on the parchment paper. Bake for 10-15 minutes, do check frequently in case it starts to burn it should be a nice light/medium brown colour.
  5. Remove from oven and set aside to cool down completely. Store in a air tight container.

Once cooled down I added a handful of dried raisins before storing in a container.

Serving suggestion

Fresh berries and dairy free milk or why not try adding some yoghurt - coconut yoghurt goes very well. Sit back and enjoy, or just grab a handful of the granola to snack on.
