Banana Almond Butter Cookies with Cranberries - Flourless


There is nothing like making your own healthy snacks, and being a lover of nut butters and having some over ripe banana in my fruit bowl decided to make these yummy banana & almond butter cookies. These cookies are so easy to make, flourless, gluten free & egg-free.




Ingredients

1/2 cup almond butter (or nut butter of your choice)
2 cups of gluten free oats
2 medium ripe bananas (285g) mashed 
1/2 tsp sea salt (optional)
1/2 tsp pure vanilla extract 
1tbsp agave nectar (optional)
1/4 cup of cranberries I used Whitworths (optional and feel free to add anything you like from nuts to chocolate chips)


Instructions
  1. Preheat oven to 160 Celsius. Line a baking sheet with parchment paper; set aside.
  2. Mash bananas in a bowl with potato masher or folk.
  3. Add rest of ingredients and mix well.
  4. Drop spoonfuls onto baking sheet and shape into cookie shapes.
  5. Bake for 15mins until slightly browned. Let cool for 5 minutes. Carefully transfer cookies to a wire rack and let cool completely. Makes about 12/14.
